Summer is in the air and fresh watermelons are all around. Time to put those juicy melons to good use in this spicy watermelon cocktail with Thai chili infused tequila.
I have really enjoyed creating different cocktails with the chili infused tequila. It brings good heat and was perfect in the spicy blood orange margarita.
The idea for this spicy watermelon cocktail came to me after I remembered a drink I had at a local restaurant last summer. It was some type of margarita that had chilis, watermelon and ginger. I don’t remember the exact ingredients but I do know I liked it.
And I just so happened to have the Thai chili tequila, fresh watermelon and some ginger beer in the fridge all at the same time. Call it fate, I guess. Or maybe luck. Or maybe both.
The muddled watermelon is the perfect companion for the spicy tequila.
And the ginger beer adds a different type of spice with hints of sweetness. I used Fever Tree ginger beer because it’s all natural and so far is the best one I’ve tried.
Together, these ingredients create spicy watermelon cooler that is perfect as a summer cocktail.
- 4 to 5 watermelon chunks
- 1 ounce Thai chili infused tequila
- ½ fresh squeezed lime
- Ginger beer
- Spear of watermelon, lime wedge and Thai chili pepper for garnish
- Muddle watermelon and fresh squeezed lime juice in a highball glass.
- Add tequila and stir to combine.
- Fill glass with ice.
- Top with ginger beer.
- Garnish with a spear of watermelon, a lime wedge and a chili pepper.
