Tango Yard {a spicy pineapple rum cocktail}

When I was in Louisiana, I had this great idea for a spicy pineapple rum cocktail with Tabasco habanero sauce. It was inspired by this fantastic dish of crispy Louisiana shrimp with Tabasco habanero sauce aioli and pickled veggies made by Aaron Sanchez.

Tango Yard : a spicy pineapple rum cocktail with pineapple habanero jamHowever, when I came home to make it, I was a little unsure of how to proceed. I didn’t want the Tabasco habanero to overpower the drink with spice, but I did want it in there.

After swapping multiple ideas with the husband, I decided a spicy pineapple jam was the best way to go. It would bring the sweet, spice and pineapple to the drink. A trifecta, if you will. A pineapple, some sugar and a bit of Tabasco Habanero Sauce later I was ready to rock, or shake rather.

Dark rum, line and Velvet Falernum were the ingredients of choice to go with the spicy jam. As it was, I found the drink a little strong. A slash of soda water fixed that right up. Serve it on the rocks with a lime wheel and you’re good to go.

As for the name of this spicy pineapple rum cocktail, it comes from Cecil Hymel, VP of Administration at McIlhenny Company. After doing some reading in the book, Tabasco: An Illustrated History, I found that “The Tango” is the name for the worker village on Avery Island. A dance hall used to be there in the early 20th century when the tango was a popular dance. And I suppose after a few of these Tango Yard cocktails you might start doing the tango yourself…

Serves: 1
Ingredients
  • 2 barspoons pineapple habanero jam**
  • 1-1/2 ounces Myers's Dark Rum
  • ¾ ounce fresh squeezed lime juice
  • ½ ounce Velvet Falernum
  • 1 ounce Soda Water
  • Lime wheel for garnish
  • **Ingredients for Pineapple Habanero Jam:
  • 1 pineapple, cut into 1 inch cubes
  • 1-1/2 cups sugar
  • ½ tablespoon Tabasco Habanero Sauce
Directions
  1. Add pineapple habanero jam, rum, lime juice and Velvet Falernum to a cocktail shaker and fill with ice.
  2. Shake and double strain into a rocks glass filled with ice.
  3. Top with 1 ounce soda water and garnish with a lime wheel.
  4. Makes 1 cocktail.
  5. **Directions for Pineapple Habanero Jam:
  6. Combine pineapple chunks and sugar in a medium pot over medium heat. Bring to a boil and then reduce the heat to medium low and let simmer until the pineapple is soft and translucent - about 30 to 45 minutes. Stir as needed during this time.
  7. Using an immersion hand blender (or transfer the mix to a blender), blend until smooth.
  8. Add Tabasco Habanero Sauce and stir.
  9. Let cool, transfer to glass jars and store in the fridge until ready to use.
  10. The jam makes about 1-1/2 pints, I put mine in three ½ pint jars and froze 2 of them for later.
