The heat of summer calls for a refreshing cocktail. And that’s exactly what we have for you with this pineapple ginger cocktail. It’s sweet like the pineapple vodka cocktail. And it has a ginger beer kick like the pear ginger cocktail.
I’ve been slowly working on the recipe for this pineapple ginger cocktail since last summer. I first made it with orange vodka and no bitters. I never got around to posting it for some reason. So this summer, I started working on it again.
I switched the vodka to ABSOLUT Ruby Red Vodka. It has a nice zesty grapefruit flavor that is good for mixed drinks. It was used before in the Citrus Champagne Punch. It’s also good in the grapefruit cocktails that call for vodka.
I also decided to add some bitters to the mix since I had recently picked up a bottle of Bittermens Boston Bittahs. It’s a combination of citrus and chamomile that screams summer. Just like this pineapple ginger cocktail.
I even changed the name I had for the drink. I’m now calling it the “Sands of Summer Cocktail” because I want to drink it on the beach. But then again, I want to drink all of my cocktail recipes on the beach.
Oh, and for the ginger beer… I recommend Fever Tree ginger beer. It has a really good ginger kick and is made with all natural ingredients. It’s also really good in a Moscow Mule. And in an ABSOLUT Hibiskus Vodka Cocktail.
- 1½ ounces grapefruit vodka
- 2 ounces pineapple juice
- ½ ounce St. Germain elderflower liqueur
- Bittermens Boston Bittahs to taste
- Ginger beer
- Grapefruit mint sprig for garnish
- Combine ingredients in a cocktail shaker with ice.
- Shake and strain into an ice filled collins glass.
- Top with ginger beer.
- Garnish with a sprig of grapefruit mint.
