Tropical Mojito {with Coconut Rum}

There is nothing better than a tropical inspired drink to take you away from the day to day life of work, kids and school. The Tropical Margarita was filled with mango, papaya, and pineapple flavors from the tropics. This pineapple coconut mojito goes in a little different direction. But it’s equally as enjoyable.

I would say this pineapple coconut mojito is a Chi-Chi Cocktail mixed with a mojito. Except it’s not blended like the Chi-Chi. It’s on the rocks, just like a mojito should be.

The coconut part is from coconut rum. I went with Bacardi Coconut rum since it’s what I have. You could also use Malibu. We’ve used coconut rum in some other cocktails including the Cherry Colada Cooler and the Coconut Margarita.

For the mint, I used spearmint. But I think pineapple mint would also be good if you have some. It would fit with the tropical theme of the mojito. Pineapple chunks make a nice garnish for the drink. Plus, you can eat them and we all like edible garnishes. Especially when it’s fresh pineapple in the summertime. Yum!

Pineapple Coconut Mojito {with Coconut Rum}


5-6 mint leaves

1/2 fresh squeezed lime

1 1/2 ounces coconut rum

2 ounces pineapple juice

Soda water

Mint sprig, lime wheel, and pineapple chunks for garnish


In a highball glass, muddle mint leaves with fresh squeezed lime.

Add pineapple juice and coconut rum. Give it a little stir.

Fill glass with ice and top off with soda water.

Garnish with a sprig of mint, a lime wheel, and a few fresh pineapple chunks.

Makes one pineapple coconut mojito.
