Bust out that bottle of mezcal again, you’re gonna need it for this mezcal meyer lemon cocktail. Instead of being strong and spiritous like the mezcal amaro cocktail, this one is little on the lighter side – but still delicious.
The recipe started with a bottle of mezcal and some Meyer lemons that I really needed/wanted to use. To bring in some herbal notes and help balance the smokey of the mezcal and the floral citrus of the Meyer lemons, I added some Yellow Chartreuse. Knowing it needed a little sweetner, but not wanting to change the flavor of the drink to much, I went with agave nectar. It’s great with agave based spirits – especially in a margarita and fit nicely with everything else in the drink. A little dash of Angostura bitters put the final touch on it all.
I wanted to use a sprig of something fresh from the garden for a garnish, but being the dead of winter and having a garden full of snow presented a little challenge there. Fortunately, the rosemary was still standing – ready to be called to action.
I’m a big fan of this mezcal meyer lemon cocktail as a lunch libation with some small al pastor tacos and a side of chips and guac – otherwise known as my normal Sunday lunch. I suggest you try it.
- 1-1/2 ounces mezcal
- ½ ounce Yellow Chartreuse
- ¾ ounce Meyer lemon juice
- ¼ ounce agave nectar
- 1 dash Angostura bitters
- 1 small sprig rosemary for garnish
- Add all ingredients except garnish to a cocktail shaker and fill with ice.
- Shake and double strain into a chilled coupe glass.
- Garnish with rosemary sprig and enjoy!
