Lemon Raspberry Cocktail

Raspberries and lemon are a good pair. I mean, hello… have you had the raspberry lemon drop martini? Yum! This time, the duo is back in the form of this lemon raspberry cocktail.

I came up with this drink as I was cooking dinner one night. I still had some raspberry infused vodka in the fridge so I started with that. If you don’t have any homemade raspberry vodka, that’s okay. Either make some (although it takes a week or two) or buy some. You’ll be able to also use it in the raspberry martini and the berry sangria.

I also had a bottle of Q Sparkling Lemon that I had picked up on impulse while shopping at Total Wine. I’m already a big fan of Q Tonic Water and Q Ginger Ale so I figured the lemon was worth trying. And it was. It’s dry with a delicate tart flavor. It’s also low in calories and made with real ingredients such as organic cane sugar and extracts from lemons, key limes and tangerines.

So, I had two ingredients for my lemon raspberry cocktail… raspberry vodka and sparkling lemon. Organic raspberries were in the fridge so I put a few of those in the cocktail shaker. It’s always fun to muddle, right?

Since I was going to muddle the raspberries, I also went out to the garden and grabbed some lemon balm. I used it previously in the lemon cocktail and I thought it would be a good addition to this one. Plus, I have so much of it growing right now I have to do something with it.

After a few sips of my cocktails, I had a last minute idea. Limoncello. Well, Ventura Limoncello to be exact. The bottle I had in the freezer was nice and chilled so I poured in a little to my drink. I left my husband’s undisturbed so we could compare.

Both versions of the lemon raspberry cocktail were good. Mine was slightly sweeter thanks to the limoncello. I suggest you try it both ways.
