When a person has a lot of cucumbers in the garden, said person makes cucumber infused vodka. When that vodka is done infusing, said person needs to use it. And use it they shall, starting with this cucumber mint cocktail.
In case you were wondering, said person is me. And hopefully you too. If you don’t have a garden full of cucumbers, use store bought organic cukes to make your own vodka. Or purchase a bottle of Square One Organic Cucumber Vodka. Either way, you’ll be able to use it to make this cucumber mint cocktail.
In my fridge right now I have a pitcher of cucumber mint infused water for the me and kids to enjoy. As I mentioned in the cucumber gin martini post, I have a lot of cucumbers that need to be used. This water was just one of the many ways I did that. I also made some spicy ginger garlic pickles that were really good.
Anyway, back to this drink… As I was pouring myself a glass of that water the idea hit to make a cucumber mint mojito. So I started doing that. Except as I was muddling the mint and cucumber in the cocktail shaker, I decided to use the cucumber vodka instead of rum.
It was a good decision. The cucumber flavor really comes through in this drink. It’s also nice with the mint. It’s a delicate drink that I’m sure I’ll be enjoying over and over and over. Or at least until the frost hits and my cucumbers stop growing.
- 5 slices of cucumber
- 5 to 6 mint leaves
- ½ lime
- 2 ounces cucumber vodka
- Soda water
- Simple syrup to taste
- Mint sprig and/or a slice of cucumber for garnish
- In a cocktail shaker, muddle cucumber and mint leaves with the fresh squeezed lime juice.
- Add the cucumber vodka with ice.
- Shake and strain into an ice filled rocks or highball glass.
- Top with soda water.
- Add simple syrup to taste and stir.
- Garnish with a sprig of mint and/or a slice of cucumber
