Chi Chi

Recently I went to Kauai on vacation and discovered this delightful tropical drink called Chi Chi. It’s just like a pina colada but made with vodka instead of rum (and we love vodka cocktails over here at One Martini). So, my mission upon returning home was to recreate the Chi Chi Cocktail.

Chi Chi Cocktail

2 ounces vodka

2 ounces cream of coconut

2 ounces pineapple juice

Preparation

Place all ingredients in a blender with 10-12 pieces of ice and blend until smooth.

Pour into glass and garnish with a pineapple and a cherry (or if you are trying to remember what it’s like to drink in Hawaii use a cute little umbrella).

Makes one drink (but I can guarantee you will want more than one).

    aaaaah! Too bad I’m prego. I’m going to bookmark this for after the baby is born. I LOVE tropical drinks!

    Yum! I love tropical drinks. I’m assuming the kids version the other day was the non-alcoholic one. 😉

      Of course it was. The kids loved their version of it but I think they had more fun saying the name of the drink.
